I think these are my new favorite vegetable.
I was surfing Pinterest most of the day looking for some new recipes to try and came across roasted carrots. I already love roasted cauliflower so I thought the chances were good this would also be a hit.
I was also thinking about the rosemary plant that grows by my front door and thought this would be a good use.
carrots (I used whole ones and chopped)
fresh chopped rosemary
I don't have exact amounts because I didn't measure. I peeled and chopped the carrots and tossed in olive oil to coat. I added all the seasonings and tossed to mix well. I spread the carrots on a foil lined sheet and baked at 450 for about 10 minutes. They were just starting to brown on the side touching the pan. I stirred and cooked for about another 5 minutes. Then I turned on the broiler and just watched them, stirring every minute or 2, until they were browned to my taste.
These were so delicious. I almost didn't leave any for G to try, haha. I may have to add this to the Christmas dinner menu. We usually cook them in with the brisket, but maybe we'll try something different this year.
